This Sheet Pan Roasted Veggies and Butternut Squash is a hearty and delicious side dish that’s also really fun and easy to make!

Ingredients

  • 1/2 small-medium butternut squash, peeled and diced.  You want to dice it fairly small so that it cooks at the same time as everything else.
  • 3 medium zucchini squash
  • 1/2 purple onion, diced small
  • Yellow Bell pepper
  • Scallions
  • Extra virgin Olive oil
  • Pink Salt
  • Black pepper
  • Garlic Powder, organic if you have
  • Paprika
  • Cumin
  • Fresh Rosemary leaves
  • 1 garlic clove
  • butter

  1. Pre-heat oven to 400 degrees F.  On a large sheet pan, toss together the veggies, butternut squash, onion, scallions, olive oil, paprika, cumin, salt and pepper.  
  2. Roast until butternut squash is fork tender, 50-60 mins.
  3. When almost finished roasting, in a small saucepan cook together the butter, fresh diced garlic.  You want your garlic clove to be sauteed in the butter
  4. Once you remove veggies from the oven drizzle with the garlic butter. Serve and enjoy!
