Ingredients

1 pound ground turkey

1/2 cup quinoa (cooked)

1/2 cup steamed green beans and carrot

1 egg

1 tsp olive oil or avocado oil

1 1/2 cup cauliflower rice (fresh cauliflower raw. I didn't use frozen cauliflower rice)

Spices to taste: garlic powder, cumin, onion, paprika, salt & pepper

Preheat oven to 400 F

Add all ingredients into a large bowl, mix with clean hands and combien well, toll into 1 inch balls and bake for 2-25 minutes or until meatballs are golden.

Keep fresh in the refrigerator for 3 days or freeze in a airtight container for up to 2 months.
